Pink Rhubarb describes the rhubarb which contains less anthocyanins than common garden rhubarb. The greater the concentration of concentration of anthocyanins, the more crimson the rhubarb is in its appearance. It is also slightly sweeter in flavour.
Pink rhubarb is sour and acidic, but when balanced with sweetness, it's tart and refreshing all at once.
