The West Winds Gin

The boldest of the West Winds fleet, The Broadside is a Navy Strength Gin with, made to honour the most brazen, aggressive and fearless of naval war tactics where warships released a close-range barrage of firepower from every gun along one side of the hull. This Navy Strength Gin is as bold as this manoeuvre.

Its intensity of flavour comes from the delicious Sea Parsley seasoned with Margaret River Sea Salt. The Broadside Gin was likely the first spirit in the world to incorporate filtered seawater. The Broadside’s higher alcohol percentage amplifies the aroma of the botanicals and is a perfect example of what high proof spirits can offer.

The West Winds Gin The Broadside Navy Strength Gin

The Wild Plum is our native take on the popular Sloe Gin style.

The name comes from the use of two different plums, the native Australian Davidson Plum and Sloe Berries (which are technically plums). The great earthy and warm taste of the gin comes from this combination with a tart and sweet rounded finish.

Starting with a healthy base of juniper, licorice root, and angelica root, let's add native Australian anise myrtle and orange peel. The combination of anise and orange gives the gin great depth and warm properties.

The Davidson plums have a nice tart stone fruit note, while the sloe berries enhance the fruit taste with a compote character.

The fruit pulls for 3 months, enough time to extract the lovely fresh flavors, but not long enough to produce those astringent notes.

Finally, the gin is lightly sweetened with Banksia Honey from the Swan Valley to lift the fruity character and give it a little sweetness.

The Friends of Kings Park Botanical Gin

The Cutlass is a beautifully aromatic gin with a unique Australian character. It combines traditional juniper alongside some uniquely Australian elements like Cinnamon Myrtle and Australian Bush Tomato to create a Savoury Gin. Handcrafted small batch is the key to its delicacy. The introduction of Australian Bush Tomato pairs up with an increase in Coriander seed to produce a headstrong but beautifully aromatic gin. Garnish with a sliver of green capsicum or cherry tomato.

After maturing for 2 years in an aged Gewürztraminer barrel the peppery notes of the gin’s native sage and thyme are tempered with time in oak. Floral aromas of violet and soft pine produce an elegant gin with sophisticated depth. We have released the Barrel Expedition II at a very approachable (45% ABV). 

Barrel-aged gins are created by undergoing a period of time maturing in oak casks. These oak casks have usually been previously used to store whiskey or wine or some other liquor.  The fundamental idea is to enhance the flavour of the gin by imbuing the liquid with some of the flavours and aromas of the oak barrel and the liquid that it previously contained.

The West Winds Barrel Expedition II

The Pinque Rosé Gin derives its name from the 17th century sailing ships with a very narrow stern, flat bottoms, and shallow draught - affectionately known as Pinks. Their versatility, much like The West Winds Pinque Rosé Gin, was heralded by merchants and the navy as being the perfect companion for almost any occasion.

Pinque has been produced utilising the fantastic characters of Cabernet Sauvignon from the Margaret River region. The incorporation of Cabernet Sauvignon not only gives the gin its beautiful Rosé colour, but also adds to the red berry fruit character of the gin.

A ‘serious’ pink gin that is all about gin flavour and not sugar (!), utilising botanicals such as Strawberry Gum, Vanilla Pod, Cinnamon Quill, Lemon Myrtle and Orange Peel with a backbone of red berry fruit from the addition of the Cabernet Sauvignon.
The Pinque gin has a lifted perfumed nose with red berry, sweet spice, and a hint of orange, with underlying aromas of juniper and Citrus add balance and depth. The palate is flavoursome and plump, with strawberry fruit freshened up with a Citrus backbone and finishing with soft vanilla characters.

The West Winds Pinque Rosé Gin

Aged 12 months on Chardonnay lees in a barrel sourced from Fishbone Wines, this gin has a creamy mouth feel with subtle native Australian wattleseed and Oak touches.

The West Winds Sur Lie Gin is a pairing of two Margaret River based producers, Fish Bone Wines and the home of The West Winds Distillery. Starting with a strong Citrus based distillate, the base gin was then aged in Chardonnay Barrels sourced from iconic wine producer from Margaret River, Fish Bone Wines.

Having discovered a love for the taste of Chardonnay Lees in a previous life as a wine maker, Anthony Reynolds, now The West Winds Head Distiller had the idea to merge both brands to create something new and exciting for summer 2020. His idea was to age a gin not only in Chardonnay barrels but to also incorporate the use of Chardonnay Lees into the mix. This process creates an exceptionally smooth and rounded gin, with extra texture and palate weight similar to that of a Chardonnay wine.

Only a limited number of bottles has been produced.

The name ‘Sur Lie’ translates literally to ‘Aged on Lees’, a term used in French wine making.

The genesis of this gin was back in 2015 when we distilled a little drop called Cousin Vera’s Gin.

Made with our friends at Santamanía Destileria Urbana in Madrid, this was the first gin in our Distiller Series.

It was also was our first foray into savoury, Mediterranean-inspired gin flavours using fresh olives and rosemary.

Cousin Vera’s Gin came and went pretty quickly, but remains a cult classic in the Four Pillars canon for those who crave that savoury style.

After that collaboration, we knew gin and olives would combine beautifully and a trip to the olive groves of northern Victoria confirmed it for us.

It was after visiting Cobram Estate in Boundary Bend during olive harvest that we realised olive oil could be a brilliant botanical alongside dried olive leaves.

The aroma, flavour and texture of fresh olive is stunning, so we did an entire year of trials before finalising the recipe. The result is a completely delicious, savoury and bright gin.

Savoury botanicals like rosemary, bay and olive leaf combine with vibrant olive oil to transport you to the Mediterranean.

Four Pillars Rare Dry Gin is the baby of Four Pillars, the firstborn so to speak. It's the concept that brought Four Pillars on this journey ... a really modern Australian gin.
 
The aim was to create a gin that represented the idea of ​​a contemporary Australia: classic, accessible, perfectly seasoned and spiced up with great citrus fruits. Above all, dangerously tasty and made to enjoy the best gin drinks in the world, always with a perfect G&amp;T.
 
The starting point was the clean, bright waters of the Yarra Valley, some of the best in the world. Then nine signature botanicals plus whole oranges were selected to give a highly aromatic character, a Mediterranean warmth to support the more flavorful botanicals like cardamom.
 
Each of these elements (and a lot of love) were distilled together in a magnificent Wilma copper kettle made in Germany until we had a wonderfully clean spirit full of taste.
 
Botanicals come from around the world to capture the essence of contemporary Australian heritage in Europe and Asia.

Four Pillars Rare Dry Gin

Four Pillars Distillery is in Melbourne’s Yarra Valley, beautiful cool climate wine country. We’d have to be crazy not to take advantage of it. 

So back in 2015 that’s what we did. We were happily making gin out the back of our mate Rob Dolan’s winery, and in late April a tiny parcel of Shiraz came in from one of the region’s best vineyards. Rob wasn’t sure what to do with it, so we took it off his hands – perhaps without his knowledge…

It seemed perfectly obvious to Cam Mackenzie that we should steep these grapes in Rare Dry Gin to see what happened. 

The result was alcoholic alchemy… the juice turned a magical purple colour and found a sweetness straight from the ripe grapes. 

So now each year we take local Shiraz fruit, steep the whole berries in high-proof gin for eight weeks before pressing. The colour remains a deep, rich, reddish purple. Aromatically it shows fresh pine needles, citrus and spice, and distinct peppery, dense raspberry notes. The palate is lovely and sweet with a long juniper and spice character on the finish.

The marriage of our Rare Dry Gin botanicals with the most delicious Shiraz fruit on the planet. No added sugar. None. Ever.

Back in the nineteenth century gin was thought to be panacea to many things encountered on the high seas. The gimlet was invented by a doctor in the Royal Navy to ward off scurvy, with gin to fortify and Roses Lime cordial for Vitamin C. 

But several of the more gin-savvy officers of the Royal Navy suspected their supplies of gin were being diluted so they devised a test.

Often the gin was stored below deck adjacent to the gunpowder and if it was spilt onto the gunpowder and it smoked, the gin had been diluted. Only if the gunpowder still lit was the gin at least 114 proof (or 57% ABV). And so it became known as Navy Strength.

Four Pillars Navy Strength is a gin very much in the Four Pillars style, but with the volume turned up slightly beyond 11. Fresh ginger brings spiciness to the gin, while turmeric adds weight and a lovely earthiness. Also in the botanical basket are some native finger limes, grown in Byron Bay. They have an intensity of flavour that is almost impossible to believe, and they help the gin attain super citrus notes and lovely high-toned freshness.

At 58.8% ABV this gin can support some more robust and delicious botanicals from around the world.

Tidal Lines beginnt als köstliches klassisches Gin-Rezept und wird dann über einen Zeitraum von ca. 12 Monaten in ehemaligen Weinfässern aus französischer Eiche mit einheimischen Illawarra-Pflaumen aufgegossen. Der Gin und die Illawarra Plum-Frucht werden beide direkt in die Fässer gefüllt und mit dieser einzigartigen Spirituose vermählt.

Mit Aromen von frischem Wacholder, Regenwaldlimette, Illawarra-Pflaume, Zimt, Angelikawurzel, Iriswurzel und vielen anderen!

Was sind Illawarra-Pflaumen? Illawarra-Pflaumen sind extrem seltene, aus Australien stammende Bush-Tucker-Früchte, die voller Antioxidantien sind. Sie werden nicht kommerziell gezüchtet und sind keine echten Pflaumen, wie wir sie kennen.

In Großbritannien stellen Destillateure ein Produkt namens „Sloe Gin“ her, das als normaler Gin beginnt, dann aber mit Schlehenbeeren, einer kleinen schwarz-blauen Frucht, getränkt wird. Eine Schlehenbeere ähnelt einer Illawarra-Pflaume mit einigen sehr wichtigen Unterschieden. Schlehenbeeren haben keinen äußeren Samen, sind eine völlig andere Art und schmecken ganz anders. Tidal Lines ist eine in Australien heimische Version des britischen Sloe Gins, wobei Illawarra Plums anstelle der Sloe Beeren verwendet werden. Australien hat auch andere Arten von einheimischen "Pflaumen", wie Davidson-Pflaume und Kakadu-Pflaume, die sich von der Illawarra-Pflaume unterscheiden.

This gin was originally an exclusive collaboration between Four Pillars Gin, QANTAS and the Rockpool Group.

Alongside some great native botanicals, Asian spices like Szechuan peppercorns gave it a lovely warm mouthfeel (a tiny bit like Neil Perry’s famous numbing duck dish from Spice Temple). Combined with local fruits and Australian macadamia nuts this gave us a gin with lots of softness and spice.

And then something not entirely unexpected happened. Everyone wanted in on this ‘secret’ gin they had seen in fancy restaurants and airport lounges.

We think of it as a modern Australian classic, strongly led on the nose and palate by lashings of juniper.

This traditional underpinning is supported by native lemon myrtle, quandong, macadamia nuts, fresh grapefruit peel, red and green Szechuan (because what would modern Australia be without Chinese flavours?) and fresh red apples.

The result is a bright and dry gin, made in a truly Australian way, and now available for everyone to share.
