Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. The aim was to create a completely unique gin that was in the great tradition of gin distillation, but also came up with a certain amount of innovation.
In terms of its broad style, it is categorized as a London Dry Gin, but the unique character and taste come from our careful and original selection of plants.
This combination of flavor elements is macerated in alcohol for 24 hours. When the spirit is then distilled, it passes through an aroma basket in the neck of the still. This process underscores the attention to detail that is an integral part of our overall approach to the art of distillation.
Mountain ash berries, fuchsia, moor myrtle, hawthorn and heather, among others, are used for a taste of the Kerry landscape. It is a formula unknown elsewhere that is calculated, among other things, to create the feeling of place and provenance. The alcohol is collected at 70% by volume and then cut to 42.5% by volume with the purest water we get from our own well, 240 feet below the distillery.
