Der handwerklich hergestellter Gin Les Herbes Folles basiert auf Gerste und gemälztem Weizen aus Quebec und wird vor Ort gebraut und fermentiert. Der in einer Kupferkolonne zweifach destillierte Most ergibt einen süßen, weichen und reinen Alkohol. Die resultierende Alkoholbasis wird dann redestilliert, um sie mit den Aromen von einem Dutzend Wildkräutern anzureichern, die im Gaspé-Gebiet von Hand gepflückt werden. Der Gin wird schließlich in Eichenfässern verfeinert, bevor er wie ein kostbares Produkt in Handarbeit von der Ernte bis zur Abfüllung in Flaschen abgefüllt wird.

Die Kräuter und Wildblumen, die auf der Gaspé-Halbinsel wachsen, dienten als Inspiration für die Kreation dieses Gins. Es wird aus Quebec-Getreide hergestellt und vor Ort mit Stolz gebraut, fermentiert und schonend destilliert. Jedes der Kräuter, aus denen es besteht, wird auf dem Territorium von Hand gepflückt.
