Each month, a tiny part of our St. Laurent Gin production is transferred to ex-whisky casks. After resting for more than a year in oak barrels, our famous Gin infused with laminaria seaweed becomes St. Laurent Gin Vieux.
The distinctive aromas of St. Laurent Gin are rediscovered in a whole new light: herbaceous and floral notes interspersed with pine aromas reminiscent of Quebec's boreal forest. Time then leave its mark: grain and woody notes brought by the ex-whisky barrel-ageing enrich the aromatic complexity of the liquid. The finish stays true to St. Laurent Gin’s signature: a slight marine saltiness thanks to the maceration of laminaria seaweed harvested in the St. Lawrence River.

A nod to the centuries-old practice of transporting and storing gin in oak barrels, BlackFox Farm and Distillery rest the gin in virgin American white oak, giving it a smoky, woody quality that bridges the gap between gin and whisky. 

In the late 18th and early 19th centuries, gin was often transported and stored in oak barrels, giving the spirit a smoky, woody quality. With Black Fox Oaked Gin BlackFox Farm and Distillery pay tribute to this practice, aging the award-winning gin in a virgin American white oak barrel until it reaches perfection.

A judicious mix of distinct ingredients ; Juniper berries, Coriander, Orange, Lemon, Kaffir lime leaves, Cassia buds, Grains of paradise, Angelica and Orris roots, Sapote. An unconventional distillation method, slow and smooth, gives it a nice and delicate mouthfeel.
We are convinced that a playlist playing in the background at the still during distillation has an influence on the taste of the SuperSonic gin. But perhaps it's also its taste of citrus accented by the addition of Kaffir's lime leaves, or simply the fact that it is done in small lots, with love, one bottle at a time. Wait ... maybe it's a mix of all of these things put together!

Perfect serve : Neutral tonic with a bit of mint or simply straight on ice.

The complex yet perfectly balanced taste profile of Seaside Gin comes from juniper (the source of its pine-like, slightly forest-like notes), rose and lavender, citrus fruits, coriander, cardamom and - most importantly - locally, sustainably harvested seaweed, which gives the Seaside its uniquely subtle Brininess. The result is as refreshing as the walk on the beach that inspired it.

Made from white wheat, malted barley, natural botanicals and sustainable hand-harvested local winged seaweed (Alaria marginata).

Der handwerklich hergestellter Gin Les Herbes Folles basiert auf Gerste und gemälztem Weizen aus Quebec und wird vor Ort gebraut und fermentiert. Der in einer Kupferkolonne zweifach destillierte Most ergibt einen süßen, weichen und reinen Alkohol. Die resultierende Alkoholbasis wird dann redestilliert, um sie mit den Aromen von einem Dutzend Wildkräutern anzureichern, die im Gaspé-Gebiet von Hand gepflückt werden. Der Gin wird schließlich in Eichenfässern verfeinert, bevor er wie ein kostbares Produkt in Handarbeit von der Ernte bis zur Abfüllung in Flaschen abgefüllt wird.

Die Kräuter und Wildblumen, die auf der Gaspé-Halbinsel wachsen, dienten als Inspiration für die Kreation dieses Gins. Es wird aus Quebec-Getreide hergestellt und vor Ort mit Stolz gebraut, fermentiert und schonend destilliert. Jedes der Kräuter, aus denen es besteht, wird auf dem Territorium von Hand gepflückt.
