Fresh pineapple was roasted in our neighbouring restaurant, then macerated together with fresh hand-picked Scottish juniper, ginger and thyme, distilled, then matured in Pedro Ximénez sherry casks with more fresh roasted pineapple, fresh ginger and thyme, filtered and bottled.
Tasting Notes
Great sipped on its own with ice or served long over ice with soda and a julienne of fresh ginger.
