A refined yet bold multi-award winning gin, bursting with the freshness of the Scottish Highlands. Containing only two botanicals, Scottish Juniper and Rosehip, Crossbill is a true celebration of dry gin tradition.

We set out to create the first gin to be made with 100% Scottish Botanicals. Following two years of development, Crossbill was launched in 2014. Initially distilled in Aviemore, using hand-picked Juniper and Rosehip from the ancient Highland pine forests, before relocating to the legendary Barras in Glasgow’s East End, where we now macerate the same two fresh, hand-picked botanicals before distilling in our Copper Pot Bain Marie.

A refined yet bold gin, bursting with the freshness of the highlands. We suggest you serve over ice, with a naturally light tonic. Squeeze a twist of orange zest on the surface to release a burst of the natural oils, then garnish with the twisted peel.

Declared Style
We produce in small batches, using only two botanicals, Juniper and Rosehip, fresh not dried, and hand-picked from the Scottish Highlands. Each batch responds to the harvest and temperature of our surroundings, giving our gin a refined yet bold taste with unequalled freshness.

Fresh Staghorn Sumac foraged in New Hampshire, flown to Scotland and infused with fresh Scottish juniper, creates a unique exceptionally dry gin with a citrus burst.

Limited Edition
A celebration of the natural habitat of the Scottish Crossbill’s cousin, the North American Red Crossbill. Working in collaboration with a forager in New Hampshire, we picked fresh Staghorn sumac, traditionally used by American Indians to make pink lemonade, and infused it with fresh Scottish Juniper and Rosehip to give a unique dry citrus burst.

Tasting Notes
Exceptionally dry and unique gin with a pleasant tangy taste of citrus fruitiness. Best enjoyed neat over some ice.

Staghorn Sumac gin offers a floral and tangy flavour which can be paired with tonic to create a light and refreshing drink.

Fresh pineapple that has been caramelised and macerated with Scottish juniper, ginger and thyme, then distilled and aged in Pedro Ximénez sherry casks to deliver a balanced liqueur that is magnificently rich and sumptuous.

Fresh pineapple was roasted in our neighbouring restaurant, then macerated together with fresh hand-picked Scottish juniper, ginger and thyme, distilled, then matured in Pedro Ximénez sherry casks with more fresh roasted pineapple, fresh ginger and thyme, filtered and bottled.

Tasting Notes
Great sipped on its own with ice or served long over ice with soda and a julienne of fresh ginger.

A full-strength 40% abv liqueur that is a magnificently rich and balanced.

Crossbill Pineapple Gin Liqueur

An ultra-premium, limited-edition gin distilled from the juniper of a single specimen bush that is around 200 years old. It is bottled at still strength, and therefore, holds more of the essential oils from the juniper.

In the Scottish moorlands, there are some rare plants which have been producing juniper for centuries, so on discovering a specimen that is around 200-years-old, we decided to do something special to honour this time aged fruit. 

Tasting Notes
An ultra-premium gin, distilled from a single specimen juniper bush, bottled at still strength, therefore, holding more of the essential oils from the botanicals, changing the dynamic of the gin. We suggest you serve over ice with a good quality tonic and a flamed orange twist.

Declared Style
Produced using only fruit from this ancient Juniper bush and the wild Rosehip that grows around it. Bottled at 59.8% Still Strength, the Crossbill 200 Special Edition bursts with fresh pine and juniper taste. It is the perfect expression of a rare and magnificent highland plant captured and condensed.

The Botanist Gin wurde von der Whisky-Destillerie Bruichladdich auf der Hebrideninnsel Islay in Schottland kreiert. Sein milder und runder Geschmack basiert auf 22 lokalen Botanicals. Der professionelle und hauptberufliche Forager, James Donaldson, sammelt die Botanicals noch heute von Hand. Er sammelt sie auf den Hügeln, in den Mooren und an den Küstenlinien von Islay, wodurch The Botanist seinen ganz eigenen Islay Charakter erhält.
Besonders wichtig für den milden und ausgewogenen Geschmack ist neben den Botanicals auch die außerordentlich langsame Destillation in der Lomond-Kupferbrennblase namens "Ugly Betty". Die Aromen werden je nach Botanical durch Mazeration oder durch Dampfinfusion gewonnen. Adam Hannett, Head Distiller bei Bruichladdich, vertraut dabei auf seine Erfahrung und Intuition ganz ohne High-Tec Equipment. Wann die optimale Temperatur erreicht ist, misst er zum Beispiel noch heute, indem er die Hand auf die Brennblase legt. Um den fertig destillierten Gin auf Trinkstärke zu reduzieren, wird Wasser aus der eigenen Quelle verwendet.

Traditioneller London Dry Gin aus einer Brennerei, die erst seit 2009 existiert. Grundlage für diesen Gin bildet ein selbst hergestelltes Destillat aus Roggen, in welches zum Wacholder u. a.
