Have you ever got in a fight with a Bristol docker? We have, and she kicked our asses. So, when it came to naming our stronger gin, we choose to name it in her honour, knowing that this gin will kick your arse also. We use 10 carefully selected botanicals (including elderflower, kaffir lime leaves, fresh lemon zest, cassia bark and cubeb) to give this gin its floral, peppery taste. ​

A gin made in honour or a Bristolian legend of old, Thomas Cribb.

Tom Cribb was a bareknuckle fighter, born on the outskirts of Bristol in 1781. From humble beginnings, Tom fought his way  to stradom, gaining suooprt from the masses and friendship of the famous.

In keeping with the 18th and 19th century theme, this gin is based on a Victorian production style and uses a collectione of classic botanicals to add flavour- juniper, wormwood, liquorice; hyssop, bay leaf and birch leaf.

This Upper Cut gin is a navy strangth "Old Tom" style of gin, meaning that it has been slightly sweetended after the distillation process. During the 18th & 19th Century, gin production often included ingredients to sweeten the spirit. The sweetening made the gins more akin to the Dutch style but was also used by some to mask dubious production practices. Regardless of the reason, the Old Tom style of gin was incredibly popula among the drinking classes but has since fallen out of popularity.

As the the fabled hero wondered the streets in vein, searching for signs of life, he was drawn to a sight and sound that made him shudder in horror - an immovable force as great as time was long. The Ginzilla reared its head and gasped at the sign of one so lowly and childish. Why was this glittered creature so close to its mighty pedestal. How dare it break tradition and foul this hallowed space?

Why was the filthy beast not heeding its warning, how long could this travesty last.

The disco phoenix knew only one thing - when an unstoppable force met an immovable object, entire worlds would surely collide.

Bilberries, a low growing deciduous shrub native to northern Europe, provide this product with deliciously fruity tasting notes while sticking to the juniper-heavy jenever style of gin. Fisrtly, we vapour-infuse our lighter botanicals such as grapefruit and lemon peel, emphasising some tarty citrus, and bucchue leaves for a slightly dry finish, followed by the cold infusion of our beloves bilberries. A deep sultry purple colour to the eye, sweet and earthy on the nose and taste similar to that of a full bodied fruity blueberry wine.

The Botanist Gin wurde von der Whisky-Destillerie Bruichladdich auf der Hebrideninnsel Islay in Schottland kreiert. Sein milder und runder Geschmack basiert auf 22 lokalen Botanicals. Der professionelle und hauptberufliche Forager, James Donaldson, sammelt die Botanicals noch heute von Hand. Er sammelt sie auf den Hügeln, in den Mooren und an den Küstenlinien von Islay, wodurch The Botanist seinen ganz eigenen Islay Charakter erhält.
Besonders wichtig für den milden und ausgewogenen Geschmack ist neben den Botanicals auch die außerordentlich langsame Destillation in der Lomond-Kupferbrennblase namens "Ugly Betty". Die Aromen werden je nach Botanical durch Mazeration oder durch Dampfinfusion gewonnen. Adam Hannett, Head Distiller bei Bruichladdich, vertraut dabei auf seine Erfahrung und Intuition ganz ohne High-Tec Equipment. Wann die optimale Temperatur erreicht ist, misst er zum Beispiel noch heute, indem er die Hand auf die Brennblase legt. Um den fertig destillierten Gin auf Trinkstärke zu reduzieren, wird Wasser aus der eigenen Quelle verwendet.
