Just like Elg Gin No. 1, Elg Gin No. 4 is based on juniper berries, coriander seeds and carrots, but an extract of purple carrots has also been used. The carrots come from Denmark. In July, freshly picked purple carrots arrive at the distillery and are immediately soaked in a solution of which the alcohol content is 50%. The solution gradually becomes more purple. At the same time, the percentage of alcohol decreases as the alcohol also draw water out of the carrots. After 1 week, the carrots are sifted out and the purple extract is filtered. The result is an extraction of 38% alc. vol., which contains a wide range of flavours not obtained by distillation. The colorant anthocyanin is a well known antioxidant.
