Barrel-aged, English gin Gently Rested (currently stored carefully) is a barrel-aged gin that was inspired by the gin palaces of the 19th century. Back then it was customary to store English gin in Scottish whiskey barrels for another 3 weeks. This short storage gave the gin a unique, spicy finish. A tradition that, thanks to the Hayman family, continues to this day.
