The manufacturing process of the Opyos Citrus & Elderflower Gin Liqueur started in May 2019. Since only the peel of fresh grapefruit are used for the distillation of the classic Opyos Dry Gin, Opyos always has large quantities of perfect grapefruit in stock, for which we are constantly trying to find creative ways of reusing. This time Opyos has considered making a gin liqueur from grapefruit juice, which serves as a fresh and rather bitter base for the Opyos Citrus & Elderflower Gin Liqueur.
To compensate for this, they looked for a local component that could compete with this bitterness. This led to the neighbor of Opyos, the Eppelpress, which produces syrup from local elderflower. Opyos combined both components with the classic Opyos Dry Gin and gave it a few months so that most of the sediment could be collected at the bottom of the tank. As always, there is no cold filtering, nor is anything unnatural added before this liqueur is bottled at 19% vol.
