The sloe gin is really something rather special. Winchester Distillery don't use any of other gins as its base but instead have developed a special gin recipe to create a wonderful juniper canvas on which to paint the rich plum and almond flavours of the sloes. Winchester Distillery don't like overly sweet sloe gins either and so sweeten at the end of the maceration process so get just the right balance between a silky mouth-feel and just enough sweetness to balance the tartness from the sloes without it becoming sickly sweet.
