Míl is an Irish pot still gin, distilled with fragrant Mediterranean botanicals. Distilled with Almond, Basil, Bergamot Orange, Goosberry, Juniper, Olives, Orris, Rosemary and Thyme, this small-batch gin is bursting with southern sunshine. 

Míl was created by a team of ‘ginthusiasts’ at the Pearse Lyons Distillery, in the refurbished St. James Church, who were moved by the historic site links with the Camino de Santiago in North-West Spain where tradition has it St. James is buried. 

This gin is an Iberian-Irish fusion, personified through the story of Míl, the mythical Spanish warrior whose descendants populated our land bringing with them the warm flavours of the sun.

Tasting Notes
Míl is a full-flavoured Mediterranean gin made in Ireland.  On the nose it has summer fresh citrus and subtle herb notes of basil, thyme, rosemary and piney juniper. The taste is fresh bittersweet with a clean citrus finish.

Ha'penny Rhubarb ist ein erfrischender, unverwechselbar rosa destillierter Gin in kleinen Mengen, der neben 13 fachmännisch ausgewählten Pflanzen den besten Rhabarber enthält. Das nach der legendären Ha'penny-Brücke benannte Ha'penny-Sortiment umfasst Geranien, Löwenzahn, Lavendel und Brombeeren, Pflanzen, die zu viktorianischen Zeiten, als die Brücke gebaut wurde, im nahe gelegenen Phoenix Park gewachsen wären.

Tasting Notes: 
Nase: Frisches Rhabarberbouquet mit erkennbaren Noten von Wacholder und Zitrusfrüchten, gefolgt von subtilen Noten botanischer Gewürze. 
Geschmack: Zunächst frischer Rhabarber mit einer hellen botanischen Mischung, abgerundet zu einem angenehmen klassischen Harz-Wacholder-Forward-Gin. 
Abgang: Ein seidiger Gaumen mit einem anhaltend frischen Rhabarber-Abgang.

The Shed Distillery

In Japan there is a temporary period in spring when the sakura (cherry) blossoms are in full bloom. In a tradition known as "hanami", people go out to celebrate the cascading of these flowers and the change of seasons.

The Blossom Gin is born from a base of locally grown barley that is distilled into a traditional shochu spirit. The Shōchū is distilled with juniper, regional citrus fruits, cherry blossoms and local botanicals. The fruits of this endeavor can be seen in the delicate floral aromas, which are modeled on those of the mountains and the coast around our home in Kagoshima.

To make this extraordinary gin, we forage wild plants in the mountains around the distillery. What we pick goes fresh into the still within hours of foraging. All the plants are sustainably picked by our full time forager, every day we distil. We take a lot of care that we don't adversely affect the areas we find them in. Our aim is to leave no trace that we were ever there. It's harder work but worth it to keep the mountains beautiful and wild.

Then these wild botanicals are painstakingly slow-distilled to tease out delicate flavours, in very small batches of less than 250 liters. Some go in the pot, and some are hung in a basket to let vapours extract their essential oils. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first.

Yuzu is a citrus fruit that is grown and loved in Japan. Visually similar to a lemon, but with a strong scent, unique herbal notes, mild bitterness and a less pungent acidic taste.

The Yuzu Gin is born from a base of locally grown barley that is distilled into a traditional shochu spirit. The Shōchū is distilled with juniper, yuzu, local citrus fruits and botanicals, respecting the 1500 year old tradition of growing and harvesting yuzu in Japan. The yuzu taste is tart and fragrant, similar to that of lemon and grapefruit, with a hint of tangerine.

Ukiyo Japanese Yuzu Gin

Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. The aim was to create a completely unique gin that was in the great tradition of gin distillation, but also came up with a certain amount of innovation.

In terms of its broad style, it is categorized as a London Dry Gin, but the unique character and taste come from our careful and original selection of plants.

This combination of flavor elements is macerated in alcohol for 24 hours. When the spirit is then distilled, it passes through an aroma basket in the neck of the still. This process underscores the attention to detail that is an integral part of our overall approach to the art of distillation.

Mountain ash berries, fuchsia, moor myrtle, hawthorn and heather, among others, are used for a taste of the Kerry landscape. It is a formula unknown elsewhere that is calculated, among other things, to create the feeling of place and provenance. The alcohol is collected at 70% by volume and then cut to 42.5% by volume with the purest water we get from our own well, 240 feet below the distillery.

An Dúlamán Irish Maritime Gin is the first gin distilled in Co. Donegal. Dúlamán is the name of an Irish folk song which relates a conversation between two seaweed collectors (it is also the name of one of the gin seaweeds). The coast around Sliabh Liag holds an extraordinary bounty for such foragers with their centuries-old knowledge of harvesting and harnessing the qualities of these natural products. An Dúlamán bottles are reminiscent of those found along the Donegal coast during the wrecks of the Spanish Armada. Each bottle is wax sealed and the batch number is linked to the lunar phases.

To make An Dúlamán we capture “Draíocht na Farraige” (the magic of the sea) by using five locally harvested varieties of seaweed, as well as six other botanicals. This makes An Dúlamán as unique as the Donegal coast itself.

To ensure that An Dúlamán maintains its characteristic complexity and softness we have learned that Méabh (the still) likes a low ABV in the pot, and to run in a narrow temperature band to manage the delicate seaweeds.

Crafted from 100% Irish malted barley and four times copper pot distilled, our single malt spirit is then distilled a fifth time with five carefully selected botanicals to create this complex and floral Irish Single Malt Gin.

This fresh, rose-petal gin was first made to honour our head distiller's mum, Rose, at his little brother's wedding. Rose had recently passed away, and this was his way to have her there in spirit - literally.

Carefully-tended flowers from her rose garden are slowly vapor distilled with wild roses and plants from the mountains around the distillery to make this an intensely floral gin. After distilling, the gin is then further infused with even more roses to deepen the flavours and give it its lovely pink hue.

The word Slingshot evokes thoughts of David and Goliath, while on the shores of Lough Ree we think of the demise of the legendary Queen Maeve, by a Slingshot from the Longford shore as she bathed at Inchcleraun. Both acts involved dedication, skill and a measure of confidence.
