Der Aviation Gin wird als "American Dry Gin" bezeichnet, was bedeutet, dass das Geschmacksprofil weniger stark mit Wacholdergeschmack in Verbindung gebracht wird. Bei der Herstellung werden sieben Botanicals verwendet: Wacholder, Lavendel, süße und bittere Orangenschale, Kardamom, Koriander, indische Sarsaparilla und Anis. Der Gin wird zweimal destilliert. Der Gin wurde nach einem klassischen Cocktail namens Aviation benannt. 2018 hat der Schauspieler Ryan Reynolds eine Beteiligung an der Marke erworben.
