To elaborate Level Gin Reserve, we macerate our selection of botaniicals and perform three distillations. Once we get the cleanest and purest part of the last distillation we let the gin rest at least 8 months in our American oak barrels which have previously aged brandy for decades.

Appearance: Golden in colour with amber iridescence. Bright.

Aroma: Intense, elegant aroma dominated by notes of juniper and cardamom. They are perfectly structured with subtle floral notes that go perfectly with the mild toasted, roasted, spicy notes from the ageing process in oak casks.

Taste and texture: Intense flavour. Dry on the palate, it is a premium gin that is ideal for drinking on its own or with tonic.

Appearance: Colorless liquid, bright and transparent.

Aroma: Fine and delicate aroma, on the nose delicate fragrances that evoke Mediterranean aromatic plants formerly used in the manufacture of beverages by the monks of the “Cistercian Order”. These fragrances are perfectly integrated with subtle notes of citrus with the juniper distillate.

Taste and texture: Elegant and subtle flavor. Soft, fresh and sweet on the palate thanks to the distilled honey. It combines perfectly with citrus and rosemary.

BOTANICALS
The essence of locally blooming juniper, rosemary, fennel, pine sprouts, lemongrass earth extracted and especially figs and the combination of these botanicals from the remote Priorat mountains with lemon and orange peel from the southern Mediterranean of Catalonia.

MANUFACTURING PROCESS
First, the best skins of DOQ Priorat wines are selected and distilled to preserve the essence of the flavors of these famous wines.
The freshly cut botanicals are macerated in water and schnapps. After a while, it is distilled to create a concentration of herbs that form the basis of this gin.
This base is diluted with alcohol and water and then shaken vigorously, followed by a period of rest for months. The water is used from the natural Mas Baboixos spring, which rises deep in the shale layers, the typical soil of the Priorat countries.

Every ingredient and part of the process is 100% natural.
