This organic gin owes its name to the Machaon: a butterfly from grasslands, still common in the Northern Hemisphere but whose population tends to decline because of the pesticides spraying. Based on organic wheat alcohol, this gin combines botanical ingredients from Nouvelle-Aquitaine region: Juniper sprouts and berries, elderflower, rosemary, and coriander seeds. The lemon peel comes from Corsica. After a 48 hours maceration of the ingredients, the gin is distilled on a Stupfler still, then reduced step by step to 40% vol.
