The Indian province of Goa was under Portuguese influence for over 400 years. Discovered by Vasco da Gama as part of Portuguese India, traces of seafarers can still be found everywhere. The Portuguese brought the Piri-Piri into the country, from India they exported coriander, cardamom and cinnamon to Europe. We too took them to Hamburg - and macerated them together with fresh mango, roasted cumin, coriander seeds and chilli, fresh ginger, crushed cardamom and spicy Timut pepper and distilled "Fogo do Sul", the fire of the south.
