Are you looking for a smooth, easy-drinking ‘spirit’ with well-balanced citrus and/or botanical flavours that would work well in a G&T, a cocktail or even neat, over ice?

The zero option is made with Juniper, Corriander, Angelica root, Lemongrass, and Rosemary. Good traditional gin botanicals, but this isn’t a traditional gin, well it’s not even a gin at all, in order to be called gin it has to be 37.5% alcohol, and this, is 0% so we had to go down the route of calling it a ‘non-alcoholic botanical mix’ which certainly isn’t AS catchy but keeps us in check.

Because no alcohol used, the liquid in the bottle may be cloudy or white, this is just all the botanicals releasing their lovely natural oils and flavours.

In Japan there is a temporary period in spring when the sakura (cherry) blossoms are in full bloom. In a tradition known as "hanami", people go out to celebrate the cascading of these flowers and the change of seasons.

The Blossom Gin is born from a base of locally grown barley that is distilled into a traditional shochu spirit. The Shōchū is distilled with juniper, regional citrus fruits, cherry blossoms and local botanicals. The fruits of this endeavor can be seen in the delicate floral aromas, which are modeled on those of the mountains and the coast around our home in Kagoshima.

To make this extraordinary gin, we forage wild plants in the mountains around the distillery. What we pick goes fresh into the still within hours of foraging. All the plants are sustainably picked by our full time forager, every day we distil. We take a lot of care that we don't adversely affect the areas we find them in. Our aim is to leave no trace that we were ever there. It's harder work but worth it to keep the mountains beautiful and wild.

Then these wild botanicals are painstakingly slow-distilled to tease out delicate flavours, in very small batches of less than 250 liters. Some go in the pot, and some are hung in a basket to let vapours extract their essential oils. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first.

Yuzu is a citrus fruit that is grown and loved in Japan. Visually similar to a lemon, but with a strong scent, unique herbal notes, mild bitterness and a less pungent acidic taste.

The Yuzu Gin is born from a base of locally grown barley that is distilled into a traditional shochu spirit. The Shōchū is distilled with juniper, yuzu, local citrus fruits and botanicals, respecting the 1500 year old tradition of growing and harvesting yuzu in Japan. The yuzu taste is tart and fragrant, similar to that of lemon and grapefruit, with a hint of tangerine.

Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. The aim was to create a completely unique gin that was in the great tradition of gin distillation, but also came up with a certain amount of innovation.

In terms of its broad style, it is categorized as a London Dry Gin, but the unique character and taste come from our careful and original selection of plants.

This combination of flavor elements is macerated in alcohol for 24 hours. When the spirit is then distilled, it passes through an aroma basket in the neck of the still. This process underscores the attention to detail that is an integral part of our overall approach to the art of distillation.

Mountain ash berries, fuchsia, moor myrtle, hawthorn and heather, among others, are used for a taste of the Kerry landscape. It is a formula unknown elsewhere that is calculated, among other things, to create the feeling of place and provenance. The alcohol is collected at 70% by volume and then cut to 42.5% by volume with the purest water we get from our own well, 240 feet below the distillery.

An Dúlamán Irish Maritime Gin is the first gin distilled in Co. Donegal. Dúlamán is the name of an Irish folk song which relates a conversation between two seaweed collectors (it is also the name of one of the gin seaweeds). The coast around Sliabh Liag holds an extraordinary bounty for such foragers with their centuries-old knowledge of harvesting and harnessing the qualities of these natural products. An Dúlamán bottles are reminiscent of those found along the Donegal coast during the wrecks of the Spanish Armada. Each bottle is wax sealed and the batch number is linked to the lunar phases.

To make An Dúlamán we capture “Draíocht na Farraige” (the magic of the sea) by using five locally harvested varieties of seaweed, as well as six other botanicals. This makes An Dúlamán as unique as the Donegal coast itself.

To ensure that An Dúlamán maintains its characteristic complexity and softness we have learned that Méabh (the still) likes a low ABV in the pot, and to run in a narrow temperature band to manage the delicate seaweeds.

Crafted from 100% Irish malted barley and four times copper pot distilled, our single malt spirit is then distilled a fifth time with five carefully selected botanicals to create this complex and floral Irish Single Malt Gin.

Drumshanbo Gunpowder Sardinian Citrus Irish Gin

This fresh, rose-petal gin was first made to honour our head distiller's mum, Rose, at his little brother's wedding. Rose had recently passed away, and this was his way to have her there in spirit - literally.

Carefully-tended flowers from her rose garden are slowly vapor distilled with wild roses and plants from the mountains around the distillery to make this an intensely floral gin. After distilling, the gin is then further infused with even more roses to deepen the flavours and give it its lovely pink hue.

Unter Verwendung von Molkenalkohol von den lokalen Milchbauern aus Cork, zusammen mit eigenen natürlichen Brunnenwasser und einer interessanten Mischung aus lokal gesammelten und exotischen Pflanzen, wurde ein Gin gefertigt, der den Charakter von Bertha in ihren besten Jahren hervorhebt.
 
Tasting Notes:
Nase: Wacholder führt, gefolgt von den würzigen und wärmenden Noten von Kardamom, Kreuzkümmel und süßen Zitrusfrüchten.

Gaumen: süße Orange, Koriander und pfeffriger Alexanders verbinden sich zu einer wärmenden mütterlichen Liebkosung von Kreuzkümmel, Nelke und Kardamom.
