In Japan there is a temporary period in spring when the sakura (cherry) blossoms are in full bloom. In a tradition known as "hanami", people go out to celebrate the cascading of these flowers and the change of seasons.

The Blossom Gin is born from a base of locally grown barley that is distilled into a traditional shochu spirit. The Shōchū is distilled with juniper, regional citrus fruits, cherry blossoms and local botanicals. The fruits of this endeavor can be seen in the delicate floral aromas, which are modeled on those of the mountains and the coast around our home in Kagoshima.

To make this extraordinary gin, we forage wild plants in the mountains around the distillery. What we pick goes fresh into the still within hours of foraging. All the plants are sustainably picked by our full time forager, every day we distil. We take a lot of care that we don't adversely affect the areas we find them in. Our aim is to leave no trace that we were ever there. It's harder work but worth it to keep the mountains beautiful and wild.

Then these wild botanicals are painstakingly slow-distilled to tease out delicate flavours, in very small batches of less than 250 liters. Some go in the pot, and some are hung in a basket to let vapours extract their essential oils. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first.

Yuzu is a citrus fruit that is grown and loved in Japan. Visually similar to a lemon, but with a strong scent, unique herbal notes, mild bitterness and a less pungent acidic taste.

The Yuzu Gin is born from a base of locally grown barley that is distilled into a traditional shochu spirit. The Shōchū is distilled with juniper, yuzu, local citrus fruits and botanicals, respecting the 1500 year old tradition of growing and harvesting yuzu in Japan. The yuzu taste is tart and fragrant, similar to that of lemon and grapefruit, with a hint of tangerine.

Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. The aim was to create a completely unique gin that was in the great tradition of gin distillation, but also came up with a certain amount of innovation.

In terms of its broad style, it is categorized as a London Dry Gin, but the unique character and taste come from our careful and original selection of plants.

This combination of flavor elements is macerated in alcohol for 24 hours. When the spirit is then distilled, it passes through an aroma basket in the neck of the still. This process underscores the attention to detail that is an integral part of our overall approach to the art of distillation.

Mountain ash berries, fuchsia, moor myrtle, hawthorn and heather, among others, are used for a taste of the Kerry landscape. It is a formula unknown elsewhere that is calculated, among other things, to create the feeling of place and provenance. The alcohol is collected at 70% by volume and then cut to 42.5% by volume with the purest water we get from our own well, 240 feet below the distillery.

An Dúlamán Irish Maritime Gin is the first gin distilled in Co. Donegal. Dúlamán is the name of an Irish folk song which relates a conversation between two seaweed collectors (it is also the name of one of the gin seaweeds). The coast around Sliabh Liag holds an extraordinary bounty for such foragers with their centuries-old knowledge of harvesting and harnessing the qualities of these natural products. An Dúlamán bottles are reminiscent of those found along the Donegal coast during the wrecks of the Spanish Armada. Each bottle is wax sealed and the batch number is linked to the lunar phases.

To make An Dúlamán we capture “Draíocht na Farraige” (the magic of the sea) by using five locally harvested varieties of seaweed, as well as six other botanicals. This makes An Dúlamán as unique as the Donegal coast itself.

To ensure that An Dúlamán maintains its characteristic complexity and softness we have learned that Méabh (the still) likes a low ABV in the pot, and to run in a narrow temperature band to manage the delicate seaweeds.

This fresh, rose-petal gin was first made to honour our head distiller's mum, Rose, at his little brother's wedding. Rose had recently passed away, and this was his way to have her there in spirit - literally.

Carefully-tended flowers from her rose garden are slowly vapor distilled with wild roses and plants from the mountains around the distillery to make this an intensely floral gin. After distilling, the gin is then further infused with even more roses to deepen the flavours and give it its lovely pink hue.

Numerous extraordinary botanicals grow on the wild Atlantic coast of the Beara Peninsula in south-west Ireland. These were the starting point for the idea for the Beara Ocean Gin.

The botanicals that we use in the production of our gin come from the Atlantic. These include salt water and sugar kelp that balance on distinctive citrus flavors. Cardamom, angelica and iris root provide additional flavor notes.

The result is a unique mixture of local marine flora and traditional gin botanicals - and thus an extremely pleasant and easily digestible gin.

Nose: slightly zesty with a whiff of lime, pronounced notes of coriander and a bit of pepper, there is a kind of seabreaze in the distance 
Palate: surprisingly fresh, a bit musky-spicy, warm cardamom a bit flowery like lavender

Míl is an Irish pot still gin, distilled with fragrant Mediterranean botanicals. Distilled with Almond, Basil, Bergamot Orange, Goosberry, Juniper, Olives, Orris, Rosemary and Thyme, this small-batch gin is bursting with southern sunshine. 

Míl was created by a team of ‘ginthusiasts’ at the Pearse Lyons Distillery, in the refurbished St. James Church, who were moved by the historic site links with the Camino de Santiago in North-West Spain where tradition has it St. James is buried. 

This gin is an Iberian-Irish fusion, personified through the story of Míl, the mythical Spanish warrior whose descendants populated our land bringing with them the warm flavours of the sun.

Tasting Notes
Míl is a full-flavoured Mediterranean gin made in Ireland.  On the nose it has summer fresh citrus and subtle herb notes of basil, thyme, rosemary and piney juniper. The taste is fresh bittersweet with a clean citrus finish.

Silks Gin has just been award the title of Best Irish Gin at the Irish Whiskey Awards.

Silks Gin is distilled by hand in small batches in our 500 litre custom copper pot still. Our signature botanicals are hand foraged from our family apple orchards; apple blossom from the trees, honey from our bees and elderflower and hawthorn blossom from our hedgerows. Our 14 distinct botanicals are macerated for 24 hours before slow distilling with vapour infusion. Each distillation is non-chill filtered and cut back with our own deep well water before bottling.

Distilled in our custom copper “Bennett” pot still. Distilled with 14 Botanicals. Steeping our traditional botanicals for a day before distillation ensures our gin is fresh, bright, and balanced. A Vapour Infusion Chamber is used for the more subtle underlying flavours of our signature Irish botanicals which are foraged locally from our family orchards.

Perfect Serve: Silks Classic Gin and Tonic
Ingredients: 50ml Silks Irish Dry Gin, 150ml tonic water, Ice, Slice of red apple and fresh mint, to garnish.

Method:
Fill a highball glass with ice. Add the apple slice and pour over 50ml Silks Irish Dry Gin. Top up with 150ml good quality tonic water. Stir and Serve – the true taste of Summer!

An Dúlamán Santa Ana Armada Strength Gin is a barrel-aged, navy strength expression of An Dúlamán and is the first Irish navy strength gin to come to the market. As with the classic An Dúlamán Irish Maritime Gin, Santa Ana is inextricably linked to the stunning Donegal coastline. Its name comes from La Duquesa Santa Ana, a formidable Andalusian ship which was lost off Loughros Mor, Ardara, in Philip II’s ill-fated Spanish Armada’s attempt to invade England in 1588.

Aged in Rioja wine casks from the home region of the Santa Ana’s commander, the gin takes on a beautiful rose gold hue and a slight sweetness which complements the rich umami notes of An Dúlamán Gin. After aging, Santa Ana is bottled at “Armada” strength of 57% ABV.

Enjoyed neat or over ice as a beautifully complex sipping gin. Pair with a premium tonic for an upgraded G&T, or with a simple dash of soda water over ice to relish the gin without any added flavours. A simple Martini is the perfect vehicle to showcase the strength and subtle notes of Santa Ana.

Clonakilty Distillery climb the cliffs along the shoreline to sustainably harvest native Rock Samphire, only by hand and only in season. It’s really worth the effort!

The Beara Pink Ocean Gin was originally launched in February 2018 for Valentine's Day in a limited edition. However, due to its continued popularity, we decided to include it permanently in our product range.

We use the same botanicals in the production of our Pink Gin as in the Beara Ocean Gin, our flagship. Rose water and cranberries are also added to the pink gin, which provides a floral taste and a light, fruity tartness. To prepare the gin ideally, mix it with Fever-Tree Aromatic Tonic and serve it in a copa glass over ice, garnished with a grapefruit teat.

Nose: strong nose of thyme, mediterranean floralness, fruity-sweet 
Palate: sweet tartness, soft on the palate, green coriander leaves, a hint of hey, it’s the spicy alternative to the Ocean Gin
